Cinnamon & Sugar Quinoa Bowl

Good morning all! Today I wanted to post a recipe for my gluten free friends, that is packed with protein. If you’re vegan, you’re also always trying to find Protein via other avenues. This recipe is one of my favorites for breakfast. Again, if it’s not simple, It’s not for me. This one is super simple. Cinnamon & Sugar Quinoa bowl.

  • 1 cup Quinoa (washed and rinsed to remove the soapy coating it naturally comes with)
  • 2 cups almond milk or coconut milk (I’m dairy free)
  • 2 table spoons brown sugar
  • 1 teaspoon of Cinnamon
  • Handful of crushed Pecans
  • Handful of fresh Blueberries

Place 2 cups of Almond / coconut milk to boil in saucer. Once boiling, throw in the washed quinoa, sugar and cinnamon.
Lower heat and allow quinoa to cook, occassionally stirring as it cooks. You will know its cooked when all of the milk has soaked into the quinoa.
Remove from heat, place in bowl and add Pecans and blueberries. Sprinkle added brown sugar to taste.
